Budget-Friendly Meals!
At arc Shopping Centre, we’re supporting our local community Food Bank, provided by Gatehouse, throughout 2023. So, we’ve gathered some budget-friendly recipes using pocket-friendly staples that are as tasty as they are affordable.
In this blog, we’ll show you how to whip up delicious and wallet-friendly dishes using ingredients that don’t cost the Earth – including some that the local Charity Gatehouse is collecting.
Tuna Rice Bowl:
- 170 grams uncooked rice
- 400ml water
- 1 jar tuna packed in olive oil
- 1 finely diced red pepper
- 1 finely sliced onions
- 75ml vinegar
- ½ lemon, juiced, or to taste
- 2 tablespoons soy sauce
- 2 teaspoons chilli sauce
- 1 pinch chilli powder to taste
Instructions:
Bring a saucepan of water to boil. Pour rice into the pan and bring to a simmer over medium heat. Reduce heat cover and let the rice cook for 10-15 minutes. Keep an eye on the water levels to ensure the rice doesn’t dry out.
While rice is cooking, place a tin of tuna into a large mixing bowl and break it up with your hands or a fork. Mix in a diced vegetable of your choosing or follow our recipe of peppers and onions, Then add vinegar, lemon juice, soy sauce, and chilli sauce. Mix with a fork until thoroughly combined.
Fluff rice with a fork to separate the grains and break up any large clumps; transfer into the mixing bowl. Combine all the ingredients into a large mixing bowl.
Taste and adjust seasoning if needed. Serve warm. Add seasoning to taste.
Pizza Wraps
- 200g pizza sauce
- 150g grated mozzarella cheese
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 4 large tortilla wraps (about 70g each)
- 50g sliced black olives (optional)
- 50g sliced pepperoni (optional)
- 50g sliced mushrooms (optional)
- 50g sliced jalapeños (optional)
Instructions:
Preheat the oven to 180 degrees.
Lay out each tortilla wrap on a lined baking tray
Spoon a generous portion of the pizza sauce onto the centre of each tortilla, leaving some space around the edges.
Sprinkle a portion of shredded mozzarella cheese (about 40-50g) evenly over the pizza filling on each tortilla. Add any optional toppings of your choice such as olives, mushrooms etc.
Place the wraps in the oven and cook for around 10 minutes.
Once the pizza wraps are golden brown and the cheese is gooey, remove them from the oven and enjoy!
Supermarket Sweep
Saturday 23rd September 2023, 11am – 3pm
The third of our A Bury Beautiful Workshops for 2023, our Supermarket Sweep event is coming to Charter Square this September!
Kids will have the chance to have a go at this gameshow classic whilst supporting the valuable Food Bank resource run by local Bury St Edmunds charity, Gatehouse.
You’ll have 30 seconds to find all the items from a randomly selected shopping list. Some items will have a prize for you, some will have a donation for Gatehouse, and some will have both!
Plus, we’ll be running a food hamper raffle where you’ll have the chance to win a hamper full of Suffolk goodies! We’ll donate an identical hamper to Gatehouse, too.
Food donations are welcome at any time to the foodbank station located inside the Apex.
